A continuación se describen algunas desventajas para considerar el uso del Sistema mexicano de equivalentes en la consulta de Nutrición.
Los nutriólogos estudiamos durante varios semestres la materia de cálculo dietético, para poder comprender el uso del SMAE. No debemos pretender que el paciente entienda el uso de los equivalentes con solo explicárselos en la consulta.
Resulta especialmente difícil de aplicar, cuando el paciente desea consumir un platillo con varios grupos de alimentos, por ejemplo: ensalada de pollo, pasta con verduras, huevo con frijoles, etc.
El calcular ese tipo de platillos implica un proceso matemático, que el paciente no debería de realizar.
Para lograr que el paciente se apegue a la dieta, esta debe ser lo más agradable y apetitosa posible. Los cuadros de equivalentes no motivan al paciente. Dado que la dieta se representa en una tabla con números.
El Sistema mexicano de equivalentes fue creado para hacer un cálculo aproximado. Así se menciona en la cuarta edición del SMAE página 7,
“los platillos equivalentes permiten el cálculo aproximado de menús”.
Por lo que no debemos suponer que las calorías resultantes de un cuadro de equivalentes son las mismas que consumirá el paciente,
en realidad es muy variable.
Muchos alimentos no contienen las calorías que deberían contener de acuerdo a su grupo. Inclusive no concuerdan los gramos del componente nutricio clave.
Lo cual es más evidente para el grupo de las frutas, donde el componente nutricio clave son los hidratos de carbono.
Suponiendo que el plan dietético realizado por el nutriólogo contiene 3 equivalentes de frutas.
