México, DF. El médico y académico mexicano Salvador Zubirán fue un destacado profesional de la nutrición y la medicina mexicana, rector de la Universidad Nacional Autónoma de México (UNAM), subsecretario de Educación Pública y director del Instituto Nacional de Nutrición que lleva su nombre.
A 15 años de su deceso, ocurrido el 10 de junio de 1998, el mutipremiado médico es recordado como un luchador incansable en pro de la modernización de la nutriología y la medicina mexicanas; creador de instituciones, maestro y hombre de su tiempo.
Héctor Bourges Rodríguez lo recuerda con pasión como un hombre que llegó a simbolizar valores muy apreciados por la sociedad, y como un ser humano con mucho de inspirador para las nuevas generaciones.
Un hombre que apreciaba y disfrutaba las cosas buenas de la vida y que era capaz de ver algo bueno en casi todo. “Era muy goloso y gozaba de la comida”, señala en un artículo publicado hace 10 años, en el 2003, a cinco años de la partida del doctor Zubirán.
Salvador Zubirán Anchondo, hijo de José María Zubirán y María Anchondo, nació en Cusihuiriachic, Chihuahua, el 23 de diciembre de 1898.
Cursó sus estudios preparatorios y profesionales en la Universidad Nacional de México, titulándose como médico cirujano de la Escuela de Medicina, y realizó estudios de posgrado en la Universidad de Harvard en 1924 y 1925.
De acuerdo con la biografía del médico mexicano, disponible en el portal en Internet del Instituto Nacional de Ciencias Médicas y Nutrición “Salvador Zubirán”, como docente fue profesor de terapéutica, clínica propedéutica y clínica médica en la Escuela Nacional de Medicina.
En 1939 el presidente Lázaro Cárdenas (1895-1970), le encomendó seleccionar aquellos miembros del partido español en el exilio que deseaban ingresar a México, labor que desempeñó exitosamente.
Entre 1946 a 1948 se desempeñó como Rector de la Universidad Nacional Autónoma de México (UNAM), donde destacó por aplicar una política de renovación que condujo al progreso.
Entre los diversos cargos que ocupó Salvador Zubirán destacan el de subsecretario de Asistencia Encargado del Despacho (1940-1943) y director del Instituto Nacional de la Nutrición (1946-1980).
A partir de 1958 y hasta 1962 formó parte de la Junta de Gobierno; en 1966 fue nombrado profesor Emérito de la Facultad de Medicina y en 1979 Doctor Honoris Causa; envestidura con la que la UNAM reconoció su trayectoria en esta institución.
Como autor, señala la biografía del médico publicada en el portal en Internet “chihuahuamexico.com”, publicó el libro “Ideario, realizaciones y proyectos” (1948) y más de 80 trabajos de su autoría fueron dados a conocer en revistas especializadas.
A lo largo de su sólida trayectoria recibió diversos galardones, entre los que destacan: el Premio “Luis F. Elizondo” al Mérito Científico y la Medalla “Belisario Domínguez” que entrega el Senado de la República
